With its origins in the far north of Italy, this kind of sparkling bitter-sweet cocktail has been a firm favourite with locals and tourists for a century or more. To get the full effect, you probably need to be drinking it in the sunshine beside a Venetian canal. However, this Highball Italian Spritz from the New Forest offers you something close.

The husband-and-wife team Red and Kate Johnson who created it have, very sensibly, not strayed far from the traditional recipe – apart the absence of alcohol, of course! It’s got the sharpness, the sweetness, the aroma, the lot! We did find it a little too sweet, maybe – which is why we gave it a score of four rather than five – but there’s really not much to complain about here.
