Recipe: Alcohol-free Pernod

Ever fancied trying your hand at making an alcohol-free spirit? Community Champion and chef, Paul, has got just the recipe to get you started with this alcohol-free pernod. You could try this delicious anise-flavoured drink on its own with a light mixer or as part of cocktail creations. Why not get experimenting!

Ingredients to make 70cl

200ml anise cordial (Available from some supermarkets and online sellers)
100ml lemon cordial
100ml of sugar dissolved in a little hot water
3 star anise
10 cloves
1 tsp of dried fennel
2 whole cinnamon sticks
6 cardamom pods
400ml approximately of cold still water

Method

  1. In a saucepan add the sugar and hot water to dissolve.
  2. Add the anise and lemon cordial and stir.
  3. Using a funnel (if pouring into a bottle) add the gently crushed spices.
  4. Then add the anise cordial.
  5. Give the bottle a good shake, then add the water.
  6. Serve with ice on its own, or with a light mixer such as a tonic depending on taste.
